How about intensely flavorful and fall-off-the-bone tender fried chicken? It's quick and easy and one of many dishes our family enjoys.
The chicken is pan seared for added flavor. It truly comes out very tender and juicy.
Ingredients:
1 whole chicken (fryer)
1/4 cup of olive oil
salt and pepper
1/2 cup cured olives
Marination
Few spoonful of olive oil
1 lemon
Sprigs of sage
Fried peppers
1/2 cup vegetable oil
5 or 6 frying peppers
salt and pepper
Directions
Cut the chicken in pieces. Few hours before cooking, marinate the chicken with olive oil, the juice of one lemon and few sprigs of sage. Mix to ensure even coating.
Preheat a large frying pan with oil. Add the chicken pieces and cover with lid and cook for 45 minutes turning the piece of chicken few times during cooking.
In the meantime, in another frying pan, add vegetable oil and fry the peppers.
