Zucchini and Potatoes Casserole is a no fuss dish that is delicious as a side dish for any meal. This recipe is very simple, calling for just few main ingredients, zucchini, potatoes, onion and touch of fresh tomatoes and parmesan cheese. To get the crunchy topping, I place the dish under the broiler for few minutes.
Ingredients:
2 zucchini
2 potatoes
1 whole onion (chopped)
1 cup celery
Sprigs of parsley and basil
1/2 cup olive oil
2 tomatoes chopped
1 clove of garlic
peperoncino
1/4 cup grated cheese
Cover the baking dish with foil and bake 400 degrees for 40 minutes.
If you like the top to be crisp, uncover the baking dish and place under the broiler for few minutes.
