ZUCCHINI and POTATOES CASSEROLE

 Zucchini and Potatoes Casserole is a no fuss dish that is delicious as a side dish for any meal. This recipe is very simple, calling for just few main ingredients, zucchini, potatoes, onion and touch of fresh tomatoes and parmesan cheese. To get the crunchy topping, I place the dish under the broiler for few minutes.




Ingredients:
2 zucchini
2 potatoes
1 whole onion (chopped)
1 cup celery
Sprigs of parsley and basil
1/2 cup olive oil
2 tomatoes chopped 
1 clove of garlic
peperoncino
1/4 cup grated cheese




Sauté the chopped onion and set aside.


Place all ingredients in a baking dish.  Add the fried onion.  Top it with grated cheese.

Cover the baking dish with foil and bake 400 degrees for 40 minutes.  

If you like the top to be crisp, uncover the baking dish and place under the broiler for few minutes.

If you like cheese and eggs, add a mixture of 2 eggs and 1/4 of cheese and mix with rest of ingredients before baking.
